Spinach Souffle


(This recipe yields 4 servings)
Ingredient
  • 2 10-ounce packages frozen leaf spinach -- thawed
  • 1 large egg
  • 1/3 cup lowfat milk
  • 1/3 cup grated parmesan cheese
  • 1 teaspoon crushed garlic
  • salt and pepper to taste

Instruction
  1. Preheat oven to 350 degrees F.
  2. In a medium bowl whisk together the egg, milk, cheese, garlic, salt and pepper. Fold in spinach. Place in a small casserole dish.
  3. Bake for 20 minutes, or until lightly set.
